Cheeseburger Soup Recipe

It is thick, rich and full of flavor!

This is one of those meals you can’t go wrong with something SO good. something so warm, and comforting. You will be excited to have leftovers!


Ingredients


  • 1 pound of ground meat ( I used organic turkey)

  • 4 tablespoons butter, divided

  • 3/4 cup chopped onion

  • 3/4 cup shredded carrots

  • 3/4 cup diced celery

  • 2 teaspoon dried basil

  • 1 1/2 teaspoons Italian seasoning

  • 1-3/4 pounds (about 4 cups) cubed peeled potatoes

  • 3 cups of veggie broth or whatever you prefer

  • 1/4 cup all-purpose flour ( I used g-way organic flour}

  • 2 to 4 cups shredded white / yellow cheddar

  • 1-1/2 cups whole milk

  • 3/4 teaspoon salt

  • 1/4 to 1/2 teaspoon pepper




Directions

  1. In a large saucepan over medium heat, cook and crumble ground meat add seasoning to the meat ( I used salt, pepper , basil , and Italian seasoning ) until no longer pink, 6-8 minutes; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. Sautee onions, carrots, celery, basil and Italian seasoning until vegetables are tender, about 10 minutes. Add potatoes, ground turkey and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes.

  2. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Stir in cheese, milk, salt and pepper; cook until cheese melts. Remove from heat; blend in sour cream. If desired, serve with onion rings and green onions.

Storing cheeseburger soup: once your cheeseburger soup is completely cooled place your cheeseburger soup in an airtight container or zip lock bag. This will stay in the refrigerator for 3 to 4 days long. When ready to reheat you may need to add a little chicken broth if it is too thick.
